Key Lime Pie



Key lime pie is the official dessert of South Florida. Its creamy mix of sweetness and tart are more popular than, well, apple pie.

The tropical treat is a "must try" when you're visiting The Beaches of Fort Myers & Sanibel. In fact, you can't get much closer to a perfect vacation moment than sitting beneath a shade tree, watching the fire-bright sunset and sampling a cool slice of the custard pie.

Area chefs and restaurants like to add their own twist, but the classic Key lime pie is a simple mix of Key lime juice, egg yolks, sweetened condensed milk and sugar with a Graham cracker or pastry crust and topped with meringue or whipped cream. And the custard is a warm yellow, not green.

"If you see green Key lime pie, you know it's not real," says Randy Post, manager and partner of Key Lime Bistro on Captiva Island.

Randy should know. In addition to Key lime martinis and daiquiris and a fantastic Key Lime Bistro Grouper Oscar of grouper baked under Maine lobster meat and topped with asparagus and Key lime juice, the bistro has won Best Dessert for the local Taste of the Island and Taste of the Town.

The key to the recipe is, of course, the juice of Key limes, which is extremely sour and bitter. The acids of the juice "cook" the eggs and milk, creating the custard (today many places lightly bake the pie to ensure the eggs are fully processed).

Randy at Key Lime Bistro isn't giving out his award-winning recipe, but he will say that the cracker, granola and molasses crust and Key lime vodka sauce that covers the serving plate are the just the start of their delicious dish.

Here's a recipe that won first place in the quick and easy category of the 1999 American Pie Council's National Pie Championship.

Ingredients
5 egg yolks, beaten
1 (14 oz.) can sweetened condensed milk
½ cup Key lime juice
1 (9-inch) prepared graham cracker crust

Directions
1. Preheat oven to 375 degrees F (190 degrees C).
2. Combine the egg yolks, sweetened condensed milk and lime juice. Mix well. Pour into unbaked graham cracker shell.
3. Bake in preheated oven for 15 minutes. Allow to cool. Top with whipped topping (or fresh whipped cream!) and garnish with lime slices if desired.

Makes 8 servings.
